Cheera Thoran Kerala Style | Spinach Stir Fry

Happy New Year to all! Foe the first recipe for 2023, I thought why don't I start with something healthy and tasty? Cheera / Spinach grows a lot in my neighborhood and my favorite vegetable since childhood. Cheera Thoran is a very tasty and normal side dish prepared in many houses regularly. There are different types of spinach, I love this variety. So, here is a quick healthy recipe for Cheera Thoran.

INGREDIENTS:

  1. Cheera / Spinach - 500 gms
  2. Grated Coconut - 1/2 cup
  3. Shallots - 6 - 8
  4. Onion - 1
  5. Garlic - 5 - 6
  6. Bird's Eye Chilli or Kanthari - 4
  7. Turmeric Powder - 1/8 tsp
  8. Salt - to taste
  9. Cumin Seeds - 1/4 tsp
  10. Mustard seeds - 1/2 tsp
  11. Curry Leaves
  12. Coconut Oil


PREPARATION:

In my house, the spinach is freshly picked from our garden, washed in the water shower, and will drain to remove water content. After it's dry, chop them finely.

Now in a mixer, add the grated coconut, shallots, garlic, kanthari, cumin seeds, and turmeric powder.  Just crush the ingredients.

Now in a pan, add coconut oil and pop some mustard seeds. Add thinly diced onion to it and saute well. Add some curry leaves too. Once the onion starts to change its color, add the chopped spinach to it. Add some salt and mix in everything. Cover and cook for one to two minutes, until the leaves of the spinach start to wilt.
Now add the crushed coconut mixture to it and combine them well. Cook open for 5 minutes until it is cooked. Check for salt and add if needed. 
Stir fry until it is dry enough for 2 - 3 minutes and it's done.

Serve hot with some rice, fish fry, and pickle
