Samosa | Kerala Chicken Samosa

Samosa is a triangle-shaped fried Indian snack with rich filling, which includes potato as the main ingredient. You can customize your fillings with different kinds of meat and vegetables. Chicken Samosa is a nice snack to have for an evening with Chai.

INGREDIENTS:

  1. Shredded Chicken - 200 gm
  2. Boiled Potato - 2 medium-sized
  3. Boiled Carrot - 1
  4. Onion - 2
  5. Ginger Paste - 1 tsp
  6. Garlic paste - 2 tsp
  7. Turmeric Powder - 1/8 tsp
  8. Kashmiri Chilli Powder - 1 tsp
  9. Pepper Powder - 1 tsp
  10. Chaat Masala - 1/2 tsp
  11. Garam Masala - a pinch
  12. Salt - to taste
  13. Coriander Leaves
  14. Samosa Sheet
  15. Oil
Serving: 10 - 15 samosa

PREPARATION:

For the filling, in a pan add oil. Once hot, add the chopped onion and saute well. Add the ginger garlic paste and saute until the onion turns golden. Now add the powders, turmeric powder, pepper powder, kashmiri chilli powder, chaat masala, garam masala, and salt. Saute well until their raw smell goes off. Now add the shredded chicken and saute well with the masala. Mash the boiled carrots and potatoes and add to this mixture and coat them well in the masala. Add freshly chopped coriander leaves as well, and the filling is ready.

Either you can add boiled boneless chicken with just salt and pepper. Or you add the fried chicken, and  just shred them. And you can also add frozen peas to this. 

Make a slurry with flour and water to seal the samosa. Make the samosa sheet into the shape of a triangle by folding it and adding the filling to it. Apply slurry to the outside parts of the sheet and seal it. Make sure there are no holes at the sides of the samosa. If so, it will absorb more oil into the filling. Fill the rest of the samosa sheets

In Cheenachatty, add enough amount of oil to deep fry the samosa. Once the oil is hot, add the samosa one by one, and fry on high flame for 2 minutes.
