Soya Chunks - Masala Roast

Soya Chunks is a vegetarian alternative to meat. When cooked with perfect masala mix it will taste as good as meat. Soya chunks are popularly known as a meal maker because it is filled with proteins, omega-3 fatty acids, and polyunsaturated fats. Soya chunks are good for bone, hair, and skin health. Let us see how to prepare this perfect meal maker.

INGREDIENTS:

  1. Soya Chunks - 2 cups
  2. Shallots - 15 -20
  3. Onion - 2 cups
  4. Tomato - 2
  5. Green Chilli - 2
  6. Ginger - 2 tsp
  7. Garlic - 3 tsp
  8. Curry leaves
  9. Coriander Leaves
  10. Cloves - 3 -4 
  11. Star Anise - 1
  12. Cardamom - 2 - 3
  13. Cinnamon - 1/2 stick
  14. Fennel Seeds - 3 tsp
  15. Kashmiri Chilli Powder - 2 tbsp
  16. Pepper Powder - 1 tbsp
  17. Turmeric Powder - 1/4 tsp
  18. Coriander Powder - 2 tbsp
  19. Garam Masala - 1 tbsp
  20. Salt - to taste
  21. Oil
  22. Water

PREPARATION:

Boil water with salt and add the soya chunks. Let it cook for 3 - 5 minutes until they swell and turns soft. Rinse the soya chunks in cold water and squeeze out any excess amount of water in the soya chunks. If you are using big-sized soya I prefer to slice them into half so that the masala gets absorbed to it well. 

Now in a Cheenachatty, add oil. Now add cloves, cinnamon, star anise, cardamom, and fennel seeds and saute them for a minute. Now add the crushed ginger and garlic to it. Saute until the garlic starts to change its color to brown. Now add the sliced shallots and onions. Once the onions turn translucent, add the curry leaves and sliced green chilli to it. Once the onion turns golden brown, let's add the powders to it. Add turmeric powder, coriander powder, kashmiri chilli powder, and saute them well until the raw smell of the powders goes off. 
Now add the sliced tomatoes to it. Cover and cook for 3 minutes until the tomatoes become soft. 
Now add the soya chunks and mix the masala well. Add 1/2 cup of water and close the lid and cook for 2 minutes. 
Once the water starts to dry off add some pepper powder and garam masala powder to it and saute well. Now saute continuously until all the water dries off. Turn off the flame and sprinkle some fresh coriander leaves on top.
