Kerala Style Prawns Roast


Hey Folks,

Prawns Roast is a signature Kerala seafood recipe. There are many preparations for prawns roast, some use kokum for sourness, but I prefer this simple recipe with tomato. It just requires basic ingredients and can be prepared easily. The New Year is coming, try this for breakfast or lunch. This is probably the last recipe I will be posting this year, 2022. INGREDIENTS:

  1. Prawns - 500 gms
  2. Finely Chopped Onion - 1 cup
  3. Crushed Shallots - 5 - 6
  4. Tomato - 2
  5. Crushed Ginger - 1 tsp
  6. Crushed Garlic - 3 tsp
  7. Green Chilli - 2
  8. Capsicum - 2 tbsp
  9. Curry Leaves
  10. Coriander Leaves 
  11. Mustard Seeds - 1/2 tsp
  12. Turmeric Powder - 1/2 tsp
  13. Kashmiri Chilli Powder - 1 tbsp
  14. Coriander Powder - 1 tbsp
  15. Fennel Powder - 1 tsp
  16. Pepper Powder - 1/2 tbsp
  17. Salt - to taste
  18. Coconut Oil

PREPARATION:

First, we need to clean the prawns well and marinate them with turmeric and pepper powder. Keep it apart for 15 minutes.

In a Cheenachatty, add coconut oil and splutter mustard seeds. Now add the crushed ginger and garlic to it and saute well for a minute. The flavor of ginger and garlic should infuse well into the coconut oil. Now add the crushed shallots and finely chopped onion into it. Saute well until the onion turns golden. Add the sliced green chillies, and curry leaves in between. Now add the finely diced capsicum to it. 

Now add the powders, turmeric powder, pepper powder, kashmiri chilli powder, fennel powder, coriander powder, and salt. Saute well until the raw smell of the powders goes off. Now add the diced tomatoes to it and cook until the tomatoes are mashed and cooked well. Add 2 tbsp of water and close the lid and cook for 3 minutes. 

Now add the marinated prawns to it and cover it well in the masala. Close the lid and cook the prawns for 3 - 4 minutes. Don't overcook the prawns, it will get rubbery if overcooked. Check for salt, if needed add some. It will be a thick curry, if you want more gravy you can add water or coconut milk.  Add some pepper powder and fresh coriander leaves on top and turn off the flame. 

Serve hot with some Rice, Chappathi, or Porotta.
