Koorka Mezhukkupuratty | Chinese Potato Stir fry

Koorka Mezhukkupuratty is my favorite stir-fry recipe. It's koorka season now, so I thought I will share my Koorka recipe with you. Koorka is best combined with beef and pork. This is one of the famous recipes with koorka, stir-fried with thengakothu / coconut bites and spices.

INGREDIENTS:

  1. Chinese Potato / Koorka - 500 gms
  2. Coconut Bites / Thengakothu  - 1/2 cup
  3. Shallots - 10 - 15
  4. Garlic - 5 - 8 pods
  5. Curry Leaves - as needed
  6. Dried Red Chilli - 2 - 3
  7. Turmeric Powder - 1/2 tsp
  8. Chilli Powder - 1/2 tsp
  9. Garam Masala - a pinch
  10. Salt - to taste
  11. Coconut Oil 

PREPARATION:

Cleaning koorka is a hard task. Take your time and clean them. Wash multiple times to remove dirt from them. Slice them to the shape of your preference. I sliced them to the shape of dice and the coconut bites were also of that shape. 
Marinate the koorka, thengakothu, 1/4 tsp turmeric powder, 1/4 tsp of chilli powder, curry leaves, and salt. Keep it aside for 10 minutes. Now cook them in water until it is well cooked. Be careful not to overcook them. The coconut bites should have that crunch. 

Now in a Cheenachatty, heat some coconut oil. Add crushed garlic and shallots. Add dried red chilli in half and some curry leaves too. saute them until the shallots turn brown. now add the masala powders. 1/4 tsp turmeric powder, 1/4 tsp chilli powder, and garam masala, and saute them until the raw smell goes off. Now add the cooked koorka and thengakothu. Coat them in the masala and stir fry for 5 minutes. Check for salt and add if needed. 

This is a very simple stir-fry recipe to have with rice, unless the cleaning part. It's the season now, grab some koorka from your nearby grocery store and try this tasty recipe.
