INGREDIENTS:

  1. Okra / Vendakka - 2 cup
  2. Onion - 1 medium-sized
  3. Green Chillies - 3 - 4
  4. Garlic - 5 - 6 cloves
  5. Curry Leaves - as needed
  6. Turmeric Powder - 1 tsp
  7. Salt - to taste
  8. Coconut Oil
PREPARATION:

In a large bowl of water soak the okra with some turmeric and salt for about 1 hour to remove the impurities. Cut the vendakka into thin circular shapes. While cutting it has a sticky pulp produced from it which makes it hard for cutting. Apply some lemon juice onto the knife and do the cutting and it will not stick. You can also cut them in any shape of your preference.

After cutting, in a large bowl add the vendakka, salt, turmeric powder, slit green chillies, and curry leaves. Mix them all together and keep them aside for 5 minutes.

After that in a Kadai, heat some coconut oil. Add the chopped garlic to it and saute for a minute. After that add the thinly sliced onion to it and saute well until the onion turns translucent. Now add the marinated okra mix to it and saute well for 2 minutes. Close the lid and cook well until the vendakka becomes soft. Mix them in intervals, otherwise, they will get burnt. Check for salt, add if needed. And it is ready.

Serve with some rice and curd. Try it out and comment with your suggestions.
