Pazham Pori / Ethakka Appam / Banana Fritters

Pazhampori is the most famous and signature tea-time snack of Kerala. It is a sweet snack made of ripened Ethapazham soft inside and crispy batter outside. It is one of the best snacks that you can grab from your nearest 'Chayakada'. Today I will be sharing The Perfect Cook Book recipe for some crunchy and sweet Pazham Pori.

INGREDIENTS:

  1. Ripened Banana / Ethapazham - 5 - 8
  2. Rice Flour - 1/2 cup
  3. All Purpose Flour / Maida - 1 cup
  4. Turmeric Powder - 1/4 tsp
  5. Sugar - 2 tsp (adjust according to the sweetness of the banana)
  6. Salt - a pinch
  7. Coconut Oil - as needed for frying
  8. Water - as needed for the batter

PREPARATION:

First, we need to peel the ethapazham and slice them into 4 pieces. Cut it half fully and then two pieces lengthwise. Usually, in chayakada they make big long pazham pori. But at home, I like them to be small and I like the color of it golden brown rather than yellow color. 

These Ethapazham are rich in calcium and iron. It also helps in lowering the cholesterol in your body. If you are on the healthy side you can avoid maida and replace it with wheat flour / Atta.

Now, let us make the batter ready. To a bowl add rice flour, maida, turmeric powder, sugar, salt, and water to make the batter a semi-liquid consistency. There should be no lumps in the batter. The batter should coat the bananas well. That is the perfect consistency or else the pazham pori will become soggy.

Now in a Cheenachatty and some coconut oil. Usually, I prefer cooking these kind of traditional snacks in coconut oil, because it gives a special flavor. Once the oil is hot, dip the sliced banana in the batter and coat them well. Slide into the hot oil and cook on medium heat until light golden in color. Once fried, place them into tissue paper so that it sucks up the excess oil. 

Serve hot with some hot chai or coffee and enjoy the sweet and crunchy Pazham Pori. You should also try Pazham Pori with some beef roast. It is so yummy ;). Try this snack recipe and serve it to your loved ones.
