Pavakka Pachadi Kerala Style

Pavakka Pachadi is a Kerala-style vegetarian dish that is usually served during Sadhya. It is a very simple recipe and I will share The Perfect Cook Book recipe for Pavakka Pachadi.

INGREDIENTS:

  1. Pavakka / Bitter Gourd - 1 1/2 cup
  2. Garlic - 2
  3. Ginger - 1 tsp
  4. Green Chilli - 2
  5. Shallots - 2 tsp
  6. Curry Leaves - as needed
  7. Thick Curd - 2 cup
  8. Mustard Seeds - 1 + 1/2 tsp
  9. Cumin Seeds - 1/2 tsp
  10. Salt - to taste
  11. Turmeric powder - 1/4 tsp
  12. Grated Coconut - 1/2 cup
  13. Coconut Oil - 3 tbsp
  14. Water - as needed

PREPARATION:

First, we need to soak the pavakka in water for about 30 minutes to remove the impurities. After that slice and dice the pavakka into small pieces. Bitter Gourd has high amounts of antioxidants and it helps in blood purifying. Many people avoid bitter gourd due to the bitterness, but it has many health benefits. It also helps in digestion and relieves constipation. Let's prepare the pavakka first.

To a pan add some coconut oil and add the sliced pavakka to it. Saute it on medium-low heat until it is golden brown in color and slightly fried. The texture is like that the moisture of the pavakka should be gone. Turn off the heat and keep it aside in another bowl. 

To the same pan add some coconut and splutter some mustard seeds. Add sliced shallots, ginger, green chillies, and some curry leaves. Saute until the shallots turn golden. 
 
Meanwhile in a mixer, add grated coconut, turmeric powder, cumin seeds, 1/2 tsp mustard seeds, 2 garlic, and little water and grind it to a fine paste. 

Once the shallots turn golden, add the ground paste and saute until it starts to boil. Then add the fried pavakka to it and saute for 2 minutes. Turn off the flame and let it cool well. 

In a bowl add the thick curd and whisk it to break any lumps. Once the pavakka mixture is cool, add the thick curd to it and add salt according to the sourness of the curd. Quick, Tasty, and Healthy Pavakka Pachadi is ready!
