Chicken Fry | Easy Kerala Style Chicken Fry

Chicken fry is that one dish that is loved by people of all age categories. The chicken fry that we get from the street side vendors or we call it thattukada, are so yum. It is spicy, hot, and so crispy. The podi we get after frying the chicken is the best part of chicken fry I like. Today, I am dropping in a simple chicken fry recipe for beginners including small children, who love to do some cooking experiments. Let's make some yummy Chicken Fry.

INGREDIENTS:

  1. Chicken - 1 cup
  2. Ginger paste - 1/2 tbsp
  3. Garlic Paste - 1 tbsp
  4. Kashmiri Chilli Powder - 2 tsp
  5. Turmeric Powder - 1/2 tsp
  6. Pepper Powder - 1 tsp
  7. Garam Masala - 1 tsp
  8. Salt - to taste
  9. Lemon Juice - 2 tsp
  10. Curd - 1 tbsp
  11. Curry Leaves - as needed
  12. Coconut Oil 
PREPARATION:

Clean the chicken well when bought from the store. You can either use boneless chicken or with bone. You can use liver and intestines too. I prefer chicken with bones, it is so tasty when fried. Wash the chicken well and soak in 2 tsp of vinegar for about half an hour to remove the smell.

In a bowl add curd, ginger-garlic paste, kashmiri chilli powder, turmeric powder, pepper powder, garam masala, curry leaves, and salt. Mix them in with the curd and make a paste. Now add the chicken to it and coat in the masala mix well into the chicken. Squeeze some lemon juice to it and rest for about 2 hours. You can fry it immediately also. But as long as you rest the chicken, the masala flavors get infused into the chicken and it will taste better. 

You can change the amount of pepper and chilli as per your spice preferences.
 
Heat a pan and add some coconut oil. Once the oil is hot enough, add the chicken pieces. Make sure you add only some chicken pieces so that the pan won't get so crowded. Cook on low to medium flame or the chicken will get burnt outside and raw inside. Fry them in batches. Once you finish frying chicken you can fry some curry leaves in the same oil and have it with the chicken fry. 

Serve it hot with some onion sliced on top and a lemon piece. Have it with lemon squeezed on top and an onion slice. You can either have it as a starter, or you can have it with some flaky kerala porotta, rice or chappathi.
