Beetroot Thoran is a very tasty and vibrant-looking vegetarian side dish that I love the most. It is very easy to prepare as well as very tasty. We can make many varieties of dishes with beetroot like thoran, mezhukkupuratti, kichadi, and even beetroot pickle. Beetroot is packed with essential vitamins and minerals. INGREDIENTS:

  1. Beetroot - 1 cup
  2. Shallot - 3 tbsp
  3. Green chilli - 3
  4. Garlic - 3- 4 cloves
  5. Grated Coconut - 1/2 cup
  6. Curry Leaves -  as needed
  7. Mustard Seeds - 1 tsp
  8. Turmeric Powder - 1/4 tsp
  9. Kashmiri Chilli Powder - 1/4 tsp
  10. Salt - to taste
  11. Coconut Oil - 3 tbsp
  12. Water - as needed
PREPARATION:

First, peel the beetroot and make it into very small dices. I used a big beetroot chopped to 1 cup quantity. In a bowl add the chopped beetroot, little salt, turmeric powder, kashmiri chilli powder, and curry leaves. Mix them up and let them sit for about 5 minutes. 

Meanwhile, in a Kadai add coconut oil and pop some mustard seeds. Now add crushed garlic and crushed shallots to it. Saute them until the shallots turn translucent. Now add the sliced green chillies, and curry leaves to it and saute for a minute. Now add the marinated beetroot mix to it and saute well with the ingredients in the Kadai. Add some water to it and cover and cook for about 6 - 8 minutes on medium flame. Mix them in between so that they won't get burnt. 

Once it is cooked well open the lid and add the grated coconut to it. Stir fry open for another 5 minutes.
Check for salt and adjust accordingly. 

The yummy and colorful beetroot thoran is ready to be served. Transfer to a serving bowl. It is best to have it with some hot rice and sambhar. Hope you all tried out my sambhar recipe.
