Tomato Fry - Kerala Style Recipe

Tomato Fry is a very simple dish that can be made out of the common ingredients available in every kitchen. It is a simple recipe with tomato which is very tasty and easy to make. So, today let's dive into The Perfect Cook Book recipe for Tomato Fry.

INGREDIENTS:

  1. Tomato - 3 medium-sized
  2. Onion - 4 medium-sized
  3. Garlic  - 8 - 10 cloves
  4. Green Chilli - 2 medium-sized
  5. Curry Leaves 
  6. Coriander Leaves
  7. Mustard Seeds - 1 tsp
  8. Kashmiri Chilli Powder - 2 tsp
  9. Turmeric Powder - 1/2 tsp
  10. Crushed Pepper - 1 tsp
  11. Sugar - 1 tsp
  12. Salt - to taste
  13. Tomato Ketchup - 2 tbsp
  14. Water - as needed
  15. Coconut Oil - 3 tbsp

PREPARATION:

Heat a Kadai and add coconut oil. Add mustard seeds and let them pop off completely. Now add sliced garlic and green chilli to it. Then add onions chopped in circular shape to it. Add a pinch of salt and saute it until the onion turns translucent. Add some curry leaves too. 
Now add the masala powders. Pour in the turmeric powder and Kashmiri chilli powder. Saute until the raw smell of the powders goes off. Now add the main ingredient of the dish "tomato" sliced in circular shape. Add sugar at this stage to balance the sourness of the tomato. Now add tomato ketchup. Add very little amount of water to it and let the tomato cook well. 
Taste the tomato if its raw taste has gone and cooked well. Check for salt, if needed add some. If you want to have more spiciness, you can add crushed pepper to it. Adjust spiciness according to your taste buds, we have already added green chillies.
 The oil should be present on top of the curry at this stage. Turn off the heat and top with some freshly chopped coriander leaves.

Serve it hot with some Chappathi and enjoy the delicious Tomato Fry from The Perfect Cook Book.
