Diamond Cuts

Diamond Cuts is a sweet snack that all Indians love to have. It is known as madhuraseva in Kerala. It is a very simple and delicious snack loved among all age categories. Today I will be sharing The Perfect Cook Book recipe for Diamond Cuts


INGREDIENTS:

  1. All Purpose Flour (Maida) - 1/2 cup
  2. Salt - to taste
  3. Sugar - 1 1/2 tsp
  4. Powdered Sugar - as needed
  5. Baking Powder - 1 pinch
  6. Ghee - 1 1/2 tsp
  7. Lukewarm Water - as needed for dough
  8. Coconut Oil - for deep frying

PREPARATION:

First, we need to prepare the dough. Sieve in the maida and baking powder and give it a mix. Add salt very little amount for a taste and sugar to it. Add ghee to it and give it a nice mix. Now add lukewarm water as needed to form the dough into a tight ball shape. Let it rest under a damp cloth for 15 minutes before cooking. 

After 15 minutes roll out the dough into thin sheets. Dust the rolling pad with a considerable amount of flour, else the dough will get sticky when you take it out for frying. After rolling out, cut the dough into a diamond shape either using a pizza cutter or a knife. For giving a diamond shape, line vertically and then diagonally opposite. You can vary the size of diamond cuts according to your preference.

Always make sure the cut-out dough is thin so that the diamond cuts will be crispier.

Now take a Kadai and heat the coconut oil. Fry over the diamond cuts in medium heat until it is golden brown. Once you take out them, dust and coat them in powdered sugar. Since it's hot, the sugar will get coated immediately. Repeat the steps for frying the next batches.
