Coconut Crepe Wrap | Madakkusan


 Hey Folks,

Coconut Crepe Wraps are commonly known as Madakksan in our place. It is a sweet snack filled with coconut and sugar. Today, I will be sharing The Perfect Cook Book recipe for Coconut Crepe Wrap.


INGREDIENTS:

  1. All purpose flour (Maida) - 1 1/2 cup
  2. Coconut - 2 cup
  3. Sugar - 4 tbsp
  4. Salt - to taste
  5. Cardamom Powder - 1/2 tsp
  6. Jeera Powder - 1/2 tsp
  7. Milk - 1/2 cup
  8. Water - as needed

PREPARATION:

Let's prepare the filling. Heat a pan and add coconut and sugar to it. You can vary the amount of sugar according to your level of sweetness. You can also use grated jaggery as a healthier option. Let the sugar dissolve and coat the coconut, and turn the flame off. Now add a pinch of salt, jeera powder, and cardamom powder. The filling is ready, keep it aside.

Now let's prepare the batter for the crepe. Take a bowl and add the maida. You can substitute maida with wheat flour or atta. Add 1/4 tsp of salt and give a nice mix. Now add milk and enough water to make the batter a liquid consistency without any lumps. You can prepare the batter either fully with water or milk. Now strain the batter to remove any lumps and for better texture. 

Heat a Tawa to medium heat and add the batter to form a circular crepe. Both sides will be well cooked as the crepes are so thin. Grease the tawa with some oil and repeat the cooking.

Now let's wrap it up. Add the filling to the mid of the crepe and wrap it on both sides. The sweet and yummy coconut crepe wrap is ready to be served.
