Achinga Payar Thoran - String Beans Saute with Coconut

Achinga Payar Thoran is a vegetarian side dish usually served along with the Kerala Sadhya. It is a stir-fried dish made with String Beans (Achinga Payar), onion, garlic, coconut, and spices in coconut oil. It is a typical Kerala dish loved by Malayalis. Today I will be sharing The Perfect Cook Book recipe for Achinga Payar Thoran.

INGREDIENTS:

  1. Achinga Payar -  2 cups
  2. Shallots - 10 - 15 
  3. Garlic - 5 - 8 cloves
  4. Curry Leaves - as needed
  5. Turmeric Powder - 1 tsp
  6. Kashmiri Chilli Powder - 1 tsp
  7. Garam Masala - a pinch
  8. Coconut Oil - 3 tbsp
  9. Mustard Seeds - 2 tsp
  10. Dry Red Chilli - 2 
  11. Grated Coconut - 1/4 cup
  12. Salt - to taste
  13. Water - as needed

PREPARATION: 

The first step is to boil the achinga with half tsp of turmeric, salt, and water enough to cook them.

Now to a Kadai, Add coconut oil. Once the oil is hot, add mustard seeds to it. Add dried chilli and curry leaves. Now add crushed shallots and garlic to it and saute until golden in color. Now add turmeric powder and Kashmiri chilli powder to it and saute until the raw smell goes off. 
Then add grated coconut to it and dry fry until it's crispy. To this add the boiled achinga payar and mix well until the moisture of the payar goes off. Add a pinch of garam masala powder to it and it's ready.

Serve hot with choru, meen mulakittathu, and achar,  And enjoy tasty Achinga Payar Thoran from The Perfect Cook Book.
